Abstract

This paper proposes a morphology of the evolution of the edible oil producing industry in Argentina. For this purpose, four moments are considered that summarize particular social, economic and political characteristics of the country and allow to outline breakdowns and continuities. It becomes important to look into the foundations behind the evolution of the edible oil sector that is currently producing soy oil and byproducts: its growth until becoming one of the most important export sectors, which players were involved and within which context are crucial questions that this paper is expected to make specific contributions to. Official statistical sources as well as relevant literature from the field of economic sociology and agroindustry studies were used, which provided a qualitative and quantitative perspective on this issue.
